Veggie-Obsessed at Zookini’s

Lubbock, Texas is my “home” ever since this past fall, as I began college at Texas Tech. Slowly but surely, I have found so many healthy outlets– restaurants, hole-in-the-wall stores, etc. that satisfy my clean eating habits. It’s taken me a YEAR to slowly but surely discover all of this (and I have so much more to discover). Lubbock isn’t a BIG city by any means, but when you search for places that contribute to a healthy lifestyle, you will find them. Of course, I want a Trader Joe’s or a Whole Foods… but that time will come.
Back in the day, both of my parents went to Texas Tech. Yesterday morning we were trying to pick a place to eat for lunch, and my mom stumbled upon a newspaper ad for the reopening of a place called Zookini’s. I had never heard of it, but she says that she used to LOVE this place back in the day. Yesterday was only its second day open and the salad bar geeks we are, we had to try!
First and foremost, the place was adorable. Absolutely adorable. We took a seat after first taking a sneak peak at the salad bar. I was very intrigued that it was more than just a fully-stocked salad bar. In addition, they had a potato bar (with both baked and sweet), a soup bar, and muffins/bread. How fabulous is THAT for options? All of this… and a menu of absolutely delectable appetizers, salads, entrees, and desserts.
So yummy. This salad bar was so impressive. It had everything, and then some. If I wasn’t STUFFED on veggies, I would have tried something else. But, well… I was FULL. VEGGIE COMA.
I will surely be back and so I am sure to actually try things off the menu (and not just the salad bar). I plan to do carry-out as well. Check them out at the corner of University and 82nd! You will not regret it!
